If you have ever had the privilege of going to Europe, you know that the bread you find there is leaps and bounds above any commercial bread available here in the U.S. Clinton and Louie Prager, two brothers born and raised in Carlsbad, have brought European-style artisan bread to San Diego.
They offer both a regular and a seasonal menu filled with sourdough breads, yeasted breads, sweets, snacks, and even sandwiches. Not every bread is available every day, so it’s wise to check their website for the full menu, as well as their baking schedule so that you know when your favorites are available.
I visited the recently opened Hillcrest location, but you’ll also find they have shops in Carlsbad and Encinitas. Their products are available in some stores, mostly in North County (check their website), and they are frequently at some of the local farmer’s markets (again, listed on their website).
The breads are amazing. At a previous trip to Prager Bros., I bought their Olive Rosemary bread with Kalamata olives and it was delicious. Today, I took a trip down memory lane to my first trip to Paris by having their Ham & Cheese sandwich.
It’s a simple sandwich of ham, aged Gruyère, home made mustard, and European butter on a French baguette ($6.50). The crust of the baguette and its soft interior, combined with the simple but flavorful ingredients made for a memorable bite. In Paris, you’ll typically find just a ham and butter sandwich, and Prager Brothers elevated it to a new level with the cheese and mustard.
At the Hillcrest location, there was very limited seating if you wanted to have a sandwich there. There were only two tables that seated two people each, and there was no outdoor seating available.
Prager Brothers puts a lot of love and expertise into making their locally sourced products, and you can tell by the quality of their breads. You should give them a try.
